How dummy exposure variable may be useful in case control studies?

dummy variables are created in logistic regression for categorical variables. e.g. u have 3 groups for the risk factor smoking; current smokers, never-smokers, and ex-smokers, the software will then create dummy variables to fit all the categories in analysis. does it make sense? u can use SPSS or STATA.
